Easy Italian Spinach Rollups – Recipe for Haley & You Too!

Hey…I didn’t fall off the edge of the earth just didn’t have much to say! ((stop laughing))

One of my favorite things to do is eat. In order to do that I must cook. Sometimes in the middle of the day, I have much to do and not a lot free time to stop and cook. So….I must think creatively! And I love to create….especially something easy and yummy.

This is so easy, I told Haley (gorgeous grand-daughter) that I would write a blog post about it, just for her, so she could make it herself for lunch or supper one night for her whole family. That’s how easy it is. Haley is 7 1/2, very smart and loves to cook. This is simple and satisfying and a great way to use up leftovers.

Ingredients are as follows:

Flour tortillas (brand of your liking)
Fresh Baby Spinach
Cooked Chicken, Turkey or Ham (shredded or chopped)
Mozzarella Cheese sticks
Garlic (fresh minced is best or powder will suffice)
Italian seasoning (optional)

Heat oven to 325 degrees.
Tear off sheet of foil large enough to encase your roll ups when done, use this as your work surface too for easy clean up.
Place your tortillas on foil and begin with placing spinach leaves on in a line in the center of each tortilla.
Next take one cheese stick and divide into two strips ( should easily pull apart lengthwise )
Place one half of cheese on top of spinach
Next place chicken (meat of choice) on top of spinach and cheese.
Add the minced garlic or sprinkle garlic powder
Sprinkle Italian seasoning
Your ingredients should be in a line across your tortilla.
Now roll each tortilla snugly. I like to tuck sides in and then roll up.
Next, position the rolls in the middle of foil and close foil by sealing all open ends, this keeps them from drying out in the oven.
Place pouch of roll ups in oven for about 20 minutes.

*spinach will not be soggy, you will have a fresh texture and taste.

Additional items you could add…
tomatoes (roma’s are the best, less seeds)
onion
chopped black olives
mushrooms

Serve with marinara sauce and a beautiful fresh green salad!

  1. Man that sounds YUMMY! I need to put them on the menu for next week. Today I made nachos but I didn't want to do the baked kind (never really liked those). So I experimented with queso and it was perfect! No velveeta either 😉

  2. That sounds yummo too! Autumn, please share what kind of queso you used….not a big fan of velveeta would love to know an alternative.
